London and the United Kingdom, in general, will always have my heart. I could easily see myself living across the pond Not to mention, we have friends scattered across England and Wales. Therefore, the UK became our proverbial “homebase” while we galavanted around Europe. We started in Notting Hill, where we rented THIS ridiculous apartment. It was absolute heaven. I mean, those windows! We ate a a restaurant in Shoreditch called Tramshed and Ryan and I split a giant chicken. An experience!
We then moved onto Bath for a few hours one day and I immediately fell in love. Someday, I will move here and probably change my name to Jane [Austen] and walk through the countryside eating cornish pasties…or something like that. It as the perfect mixture of nature and city. They even had a Kooples in Bath which was shocking to me. After our brief Bath stop, we headed onward to Cardiff Bay where we ate at Jamie Oliver’s italian restaurant. I had an espresso martini and it was delicious.
We also stayed at our friend Rob’s parent’s home near Oswestry/Shropshire called Rydleos Mill [which is literally a converted mill house]. There, we went on a 5 mile hike through the hills to a local pub called The Hand. I cannot even begin to explain how beautiful this countryside is. This was hands down, my favorite part of the entire trip. I wish I could go back to that day.
After our travels, we ended our trip back in London where we stayed at the Hoxton Hotel in Shoreditch. I HIGHLY suggest it. HIGHLY.
