blueberry lemonade

Last night, Katie had a few of us girls over for a mexican fiesta and oh my goodness it was delicious. She made the most amazing empanadas and chicken with rice covered in tomatoes and avocado. The presentation was ridiculous and the taste was amazing [of course]. Also, Lo created the coolest salsa made with…STRAWBERRIES. It was sweet and delicious [I don’t like spicy]. I was put in charge of drinks and I decided to make this frozen blueberry lemonade recipe I had pulled out of a magazine a while back. I don’t mean to toot own horn [toot toot!] because it was simply a cocktail amongst all the delicious food…but it was probably the best drink I’ve ever made. Here is the recipe so you all can enjoy!

In a blender, combine 3 cups of ice, 1 1/2 cups of blueberries, 1 cup lemonade, 1/2 cup of fresh mint leaves, and 1/4 cup of confectioners sugar – puree until smooth. To make this cocktail more fun, add 3/4 cup of vodka [I used grape]. HAVE FUN!
